A decadent delight, it homes in on the irresistible flavour combo of caramel and sea salt. The unique peanutty edge makes it fulfilling for adults with a cuppa, but also brings plenty of happiness to little kids.<\/p>\n<p>Fudge<\/p>\n<ul>\n<li>270 g (9.5\u00a0oz\/1 cup) almond butter<\/li>\n<li>80 ml (2<span style=\"font-size: 10.8333px;\">.5<\/span>\u00a0fl oz\/\u00a0<sup>1<\/sup>\/3 cup) coconut oil, melted<\/li>\n<li>90 g (3<span style=\"font-size: 10.8333px;\">.25<\/span>\u00a0oz\/\u00a0<sup>1<\/sup>\/4 cup) rice malt syrup<\/li>\n<li>30 g (1 oz\/\u00a0<sup>1<\/sup>\/4cup) raw cacao powder<\/li>\n<li>1 teaspoon alcohol-free vanilla extract<\/li>\n<li>1\/2\u00a0teaspoon Celtic sea salt<\/li>\n<\/ul>\n<p>Salted caramel and peanut<\/p>\n<ul>\n<li>90 g (3<span style=\"font-size: 10.8333px;\">.25<\/span>\u00a0oz\/<sup>1<\/sup>\/4 cup) rice malt syrup<\/li>\n<li>2 tablespoons cashew butter or\u00a0other nut butter<\/li>\n<li>2 tablespoons coconut oil<\/li>\n<li>sea salt, to taste<\/li>\n<li>35 g (1<span style=\"font-size: 10.8333px;\">.25<\/span>\u00a0oz\/<sup>1<\/sup>\/3 cup) roasted salted peanuts<\/li>\n<\/ul>\n<p>Method:<\/p>\n<p>Line a 12\u00a0\u00d7 18\u00a0cm (4<sup>1<\/sup>\/2\u00d7 7\u00a0inch) baking tin with baking paper.<\/p>\n<p>To make the fudge layer, whiz the almond butter and coconut oil in a food processor until smooth. Add the remaining ingredients and process until smooth and creamy. Spoon the mixture into the prepared tin to 3\u00a0cm (1<sup>1<\/sup>\/4 inches) deep and smooth the top with the back of a spoon or a spatula.<\/p>\n<p>For the salted caramel and peanut layer, clean the food processor then process all the ingredients except the peanuts until the mixture has a caramel-like consistency.<\/p>\n<p>Spoon the salted caramel over the fudge, smooth with the back of a spoon or a spatula, then scatter the peanuts over and press them in gently. Freeze for at least 1\u00a0hour before slicing and serving.
