So, it\u2019s definitely something that I wouldn\u2019t want to eat now. I decided that I needed to recreate this beloved dish of mine, and that\u2019s how this creamy tomato pasta was born. The dish gets its creaminess from soaked cashews.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 12-Oz. Can Crushed Tomatoes<\/li>\n<li>2 Red Bell Peppers<\/li>\n<li>\u00bd Red Onion<\/li>\n<li>1 Clove Garlic<\/li>\n<li>5 Tablespoons Italian Seasoning<\/li>\n<li>1 14-Oz. Box of Vegan Pasta<\/li>\n<li>3 Tablespoons EVOO Salt<\/li>\n<li>Pepper to Taste<\/li>\n<li>Fresh Basil to Garnish<\/li>\n<li>1 Tablespoon Olive Oil<\/li>\n<li>1 Cup Soaked (overnight) Cashews<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><img decoding=\"async\" class=\"wp-image-1466 aligncenter lazyload\" data-src=\"https:\/\/omstars.com\/blog\/wp-content\/uploads\/2019\/05\/creamy-tomato-pasta-image2-300x264.jpg\" alt=\"\" width=\"406\" height=\"357\" data-srcset=\"https:\/\/omstars.com\/blog\/wp-content\/uploads\/2019\/05\/creamy-tomato-pasta-image2-300x264.jpg 300w, https:\/\/omstars.com\/blog\/wp-content\/uploads\/2019\/05\/creamy-tomato-pasta-image2-768x677.jpg 768w, https:\/\/omstars.com\/blog\/wp-content\/uploads\/2019\/05\/creamy-tomato-pasta-image2-1024x902.jpg 1024w, https:\/\/omstars.com\/blog\/wp-content\/uploads\/2019\/05\/creamy-tomato-pasta-image2.jpg 1078w\" data-sizes=\"(max-width: 406px) 100vw, 406px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 406px; --smush-placeholder-aspect-ratio: 406\/357;\" \/><\/p>\n<p><strong>Method<\/strong><\/p>\n<p>In a pan, heat up the olive oil, the saut\u00e9 the red bell peppers, onion, and garlic until the onion is translucent and the peppers and garlic are tender. Pour in the crushed tomatoes and their juices, mix everything together and then let simmer. Start a pot of water boiling for the pasta. In a blender, blend together the soaked cashews and \u00be cup of water until smooth and creamy. Add the pasta to the boiling water. Season the tomato and pepper mixture with salt, pepper, and the Italian seasoning. Then, add the blended cashew mixture to the tomato and pepper sauce, and mix together well until it\u2019s creamy. Using a strainer, drain the pasta. Then add it to the sauce mixture.
