Enjoy!<\/p>\n<p>Ingredients:<\/p>\n<p>1 cup red lentils, rinsed and drained<br \/>\n1 8oz can diced tomatoes<br \/>\n4 cups vegetable broth<br \/>\n1 cup chopped spinach<br \/>\n1 small onion, diced<br \/>\n1 carrot sliced<br \/>\n3 cloves garlic, minced<br \/>\n2 tsp cumin<br \/>\nsalt and pepper to taste<br \/>\noptional toppings: diced avocado, diced red onion, cilantro, crushed red pepper flakes<\/p>\n<p>Instructions: 1) In a large pot over medium heat, saut\u00e9 the onion and garlic until softened.<\/p>\n<p>2) Add in the lentils, tomatoes, carrot, broth, cumin, and season with salt and pepper.<\/p>\n<p>3) Bring to a boil and then reduce heat to low. Simmer for about 20 minutes or until the lentils are tender.<\/p>\n<p>4) Stir in the spinach and let it wilt for 1-2 minutes.
