1 cup red lentils, rinsed and drained
1 8oz can diced tomatoes
4 cups vegetable broth
1 cup chopped spinach
1 small onion, diced
1 carrot sliced
3 cloves garlic, minced
2 tsp cumin
salt and pepper to taste
optional toppings: diced avocado, diced red onion, cilantro, crushed red pepper flakes
